Chicken sandwiches

METHoD

STEP ONE
Poach or steam chicken breasts.
STEP TWO
Chop while still warm and mix with a good egg mayonnaise.
STEP THREE
Add salt and pepper, lots of chopped celery, chives and spring onions. This can be done the day before so the filling is ready when needed.
STEP FOUR
Spread filling generously along one slice bread and then add another slice to create sandwich.
STEP FIVE
Remove crusts and cut into fingers.
STEP SIX
Serve with a glass of Chain of Ponds Amelia’s Letter Pinot Grigio

  • 5 Chicken Breasts

  • Egg Mayonnaise

  • Salt & Pepper

  • Chopped Celery

  • Chopped Spring Onions and Chives

  • 2 Loaves of Bread
